DEFROSTING

FRIDGE ~ 16 hours
The best way to defrost a steak is to leave it on a plate in the fridge overnight. Although it is a slow process, it allows the meat to safely and evenly thaw out. Make sure to remove from the fridge around 20 minutes before you start cooking.
It is safe to store in the fridge for 3-5 days.

SINK ~ 30 minutes 
If you need your steak today and you forgot to put in the fridge to thaw out, not to worry! You can speed things along by defrosting your meat in some cold water. Fill the sink (or a bowl) with cold water and completely immerse your meat.

GRILLING TIME

FIRING UP THE GRILL
Preheat your grill to HIGH (~425F).
As a general rule, you will want a higher heat for thin steaks and a lower heat for thick steaks.
You need to keep the thicker cuts on the grill for longer so the lower heat helps cook it all the way through without burning it.

PREPPING THE STEAK
An hour before cooking you will want to defrost your meat.
If you have thawed it in the refrigerator, take it out and let it get to room temperature.
Pat your steak dry and use your desired seasoning

START GRILLING
Place the meat on the hot grill and sear.
Approximate cook time is as follows:
Thin cuts: 3-4 minutes per side
Thick Cuts: 6-8 minutes per side
You will know that the steak is ready to be flipped with the moisture starts sweating out off the top of the steak. 
After the second sear (first flip) it is ok to flip over once more and cook to desired temperature.

TEMPERATURES:

Rare: 130-135 F

Medium Rare: 140 F

Medium: 155 F

Well Done: 165 F
